Mixed Fruits, Charred Corn & Clam Pasta With Tomatoes
This innovative pasta dish combines the sweetness of charred corn with the brininess of fresh clams and the acidity of tomatoes. The addition of mixed fruits adds an unexpected but delightful sweetness that balances the savory elements perfectly.
## Ingredients
- 1 lb linguine or spaghetti
- 2 cups fresh corn kernels
- 1 lb fresh clams, scrubbed
- 2 cups cherry tomatoes, halved
- 1 cup mixed seasonal fruits (peaches, nectarines, or berries)
- 4 cloves garlic, minced
- 1/2 cup white wine
- 1/4 cup olive oil
- 1/4 cup fresh basil, chopped
- 2 tbsp butter
- Red pepper flakes to taste
- Salt and pepper to taste
- Parmesan cheese for serving
## Instructions
1. Char the corn: Heat a large skillet over high heat. Add the corn kernels and cook, stirring occasionally, until they begin to char and develop a smoky flavor (about 5-7 minutes). Remove and set aside.
2. Cook the pasta: Bring a large pot of salted water to boil and cook the pasta according to package directions until al dente. Reserve 1 cup of pasta water before draining.
3. Prepare the clams: In the same skillet, heat olive oil over medium-high heat. Add garlic and red pepper flakes, cooking until fragrant (about 1 minute).
4. Steam the clams: Add the clams and white wine to the skillet. Cover and steam until the clams open (about 5-7 minutes). Discard any clams that don't open.
5. Combine everything: Add the charred corn, cherry tomatoes, and mixed fruits to the skillet. Toss gently to combine.
6. Finish the pasta: Add the drained pasta to the skillet along with the butter and some reserved pasta water. Toss everything together until well combined.
7. Garnish and serve: Sprinkle with fresh basil and serve immediately with grated Parmesan cheese.
## Wine Pairing
This dish pairs beautifully with a crisp Sauvignon Blanc or a light Pinot Grigio. The acidity of the wine complements the sweetness of the fruits and the brininess of the clams.
## Seasonal Variations
- Spring: Use asparagus and fresh peas instead of corn
- Summer: Add fresh herbs like mint and tarragon
- Fall: Incorporate roasted squash and apples
- Winter: Use preserved fruits and root vegetables
This unique combination of flavors creates a memorable dining experience that showcases the best of seasonal ingredients!
